Cabernet Sauvignon

A celebrated Bordeaux variety that has been transplanted throughout both the old and new world. We limit the yields of this late ripening variety just about every year and we’re happy with the results.
The long-term studies of the Finger Lakes show that the growing season (degree days) is similar to Bordeaux, so this grape has a place here. We make both a varietal wine and a port with Cabernet Sauvignon.
